Stone FruitPectin is essential for getting jams to set firm. Fruits such as cherries contain little pectin and must be combined with other fruits high in pectin to obtain a good set.

Damson jam.

Good setting jam, with intense flavour. Cooking apples can be used to bulk smaller amount of damsons.

(Makes 3 - 4 jars, 454g - 1 lb) - (Type of Set: high)
  1. Damsons: 1.8kg / 4 lbs
  2. Sugar granulated white: 2.225g / 5 lbs
  3. Water: 600ml / 1 pint

Preparation

Clean jars in a bowl of hot water to which has been added a small drop of washing up liquid, rinse under a running tap. Leave to stand on some clean kitchen paper towel, tops down.
Prepare fruit by washing in clean water. Prepare fruit, halve and remove stones or halve and skim off stones during cooking as they rise to the top. Place the fruit and water into your preserving pan, bring to the boil. Turn down heat and allow to simmer until the fruit is soft. Follow instructions on jam page, boil to a set, fill, cover and label.


Cherry and redcurrant.

The redcurrant helps this jam with setting and colour. (Makes 3 - 4 jars, 454g - 1 lb) - (Type of Set: medium)

  1. Black cherries: 1kg / 2 lbs
  2. Redcurrants: 500g / 1 lb
  3. Sugar Granulated white: 1.5kg / 3 lbs
  4. Water: 150ml / ¼ pints

Preparation

Clean jars in a bowl of hot water to which has been added a small drop of washing up liquid, rinse under a running tap. Leave to stand on some clean kitchen paper towel, tops down.
Prepare fruit by washing in clean water, remove stone and strip redcurrants. Place the fruit and water into your preserving pan, bring to the boil. Turn down heat and allow to simmer until the fruit is soft, 30 minutes. Follow instructions on jam page, boil to a set, fill, cover and label.


Peach jam.

(Makes 4-5 jars, 454g - ½ lb) - (Type of Set: medium)

  1. Peaches: 1.8kg / 4 lbs
  2. Lemon Juice and pith from 4 Lemons
  3. Sugar granulated white: 1.7kg / 3¾ lbs
  4. Water: 450ml / ¾ pint

Preparation

Clean jars in a bowl of hot water to which has been added a small drop of washing up liquid, rinse under a running tap. Leave to stand on some clean kitchen paper towel, tops down.
Prepare fruit by washing in clean water. Halve peaches removing stones, crack kernels and chop and add with fruit an juice into your pan. Bring to boil, simmer until soft but not pulp. Follow as for apricots on jam page.


Greengage jam

Firm setter, with a more intense flavour than plum. (Makes 4-5 jars, 454g - 1 lb) - (Type of Set: high)

  1. Greengages: 1.8kg / 4 lbs
  2. Sugar granulated white: 1.8kg / 4 lbs
  3. Water: 300ml / ½ pint

Stage 1: Preparation

Prepare fruit by washing in clean water. Halve gages removing stones. Crack 6 - 10 kernels, chop, add with fruit into your pan, bring to boil, simmer until soft but not pulp. Follow instructions as on jam page.
